Made exclusively from whole sheep's-milk, processed under strict supervision of the Consortium. •    Aged a minimum of 90 days for a firm, dense texture and a balanced, savoury flavour with nutty, buttery, and slightly grassy notes.•    Excellent as table cheese, grating cheese, on antipasti or charcuterie boards; pairs beautifully with Tuscan wines, fruits or honey.
